Take Spynoch9. p̲boile hē ī ſeþyng watr. take hē up and preſſe . . . out of þe watr and hem ī two. frye hē ī oile clene. et do þ9to powdor. et sūe forth.



Modern Redaction


Ingredients:

300g spinach
olive oil for frying
3 tsp gode powder

Method:

Bring a pan of water to the boil and add washed spinach. Take out after two minutes, drain and roughly chop. Heat oil in a frying pan and add the spinach. Stir and when it starts to crisp tip into a serving bowl. Sprinkle the good powder over the top and serve.
