Dyma risét Cymraeg cyfoes ar gyfer Dydd Gwyl Dewi. Cennin wedi ei bobi mewn cymysgfa stoc llysiau a llefrith gyda thri caws Cymreig.
Mae'r risét hon yn ddigon i ddau fel swper neu i bedwar fel ychwanegiad i bryd.
Cynhwysion:
400g o gennin wedi eu golchi a'u sychu
300ml o stoc llysiau
llefrith i wneud y stock i fynu un ol i 300ml
25g o fenyn
25g o flawd plaen
40g o gaws Cheddar Cymreig aeddfed
40g o gaws Caerffili
40g o gaws Y Fenni
pupur du ffres
4 llwy fwrdd o friwsion bara gwyn
2 domato mawr, gyda eu canol wedi tynnu ac wedi torri'n dalpiau
Dull:
Torrwch pob cennin yn dri darn cyn eu gosod yng ngwaelod sosban. Tywalltwch y stoc drosodd, dewch a'r cyfan i ferwi, gosodwch i fudferwi a gorchuddiwch gyda chaedad. Coginiwch y cyfan am tua 12 munud, neu nes fod y cennin yn feddal.
Tywalltwch y stoc oddi ar y cennin i jwg mesur a gnewch i fynu i 300ml gyda llefrith. Sychwch y cennin yn drylwyr cyn eu gosod yng ngwaelod desgil pobi bas.
Toddwch y menyn mewn sosban cyn gwasgaru y blawd am ei ben a'i gymysgu gyda'r menyn i wneud past. Ychwanegwch y gymysgedd stoc a llefrith, gan ei droi gyda fforc nes yn llyfn. Dewch a'r gymysgfa i ferwi yna cymysgwch i fewn 3/4 o bob math o gaws. Ychwanegwch y pupur du at flas (nid oes angen ychwanegu halen, gan fod y cawsiau yn hallt).
Arllwyswch y saws dros ben y cennin yna gosodwch y darnau tomato yn wastad am ben y cyfan. Cymysgwch gewddill y caws gyda'r briwsion bara cyn eu gwasgaru am ben popeth.
Trosglwyddwch i bopty wedi ei gyn-gynhesu i 220°C a chraswch am tua 30 munud, neu nes fod pen y bwyd yn euraidd a'r saws yn ffrwtian. Gweinwch yn unionsyth gyda chyw iar neu bysgod.
English Translation
This is a modern Welsh recipe for St David's day. An accompaniment of leeks baked in a mix of vegetable stock and milk with three Welsh cheeses.
This recipe is sufficient for two as a supper dish or for four as an accompaniment.
Ingredients:
400g leeks, washed and dried
300g
vegetable stock
milk, to make the stock back up to 300ml
25g butter
25g plain flour
40g mature Welsh Cheddar cheese
40g Caerphilly cheese
40g Y Fenni cheese
freshly-ground black pepper, to taste
4 tbsp fresh white breadcrumbs
2 large tomatoes, cored and cut into wedges
Method:
Cut each leek into three equal-sized pieces before arranging them in the base of a saucepan. Pour over the stock, bring to a boil then reduce to a simmer, cover with a lid and cook for about 12 minutes, or until the leeks are soft.
Pour the stock from the leeks into a measuring jug, then make up to 300ml with milk. Dry the leeks thoroughly, then arrange in a single layer in the base of a shallow baking dish.
Melt the butter in a saucepan, before scattering over the flour and mixing in well to combine as a paste. Add the stock and milk mix, whisking with a fork until smooth. Bring the mixture to a boil then work in 3/4 of each cheese. Season to taste with black pepper (there is no need to add salt, as the cheeses are salty).
Pour the resultant sauce over the leeks then arrange the tomato wedges evenly on top. Mix the remaining cheese with the breadcrumbs and scatter over the top of the dish.
Transfer to an oven pre-heated to 220°C and bake for about 30 minutes, or until the top of the dish is golden brown and the sauce is bubbling. Serve immediately to accompany chicken or fish.
