Original Recipe

To make Mustard divers ways. (from Robert May's Accomplisht Cook 1660)

To make Mustard divers ways.

Have good seed, pick it, and wash it in cold water, drain it, and rub it dry in a cloth very clean; then beat it in a mortar with strong wine-vinegar; and being fine beaten, strain it and keep it close covered. Or grind it in a mustard quern, or a bowl with a cannon bullet.

Modern Redaction

Ingredients:

100g mix of white and black mustard seeds
150ml white wine vinegar

Method:

Grind the mustard seeds in a spice or coffee grinder then pass through a fine-meshed sieve. Place in a mortar and add enough of the vinegar to give you a thick paste (or your preferred consistency).

Transfer to a jar, seal with a vinegar-proof lid and store in the refrigerator.
