Ingredients:

135g butter or margarine
200g granulated sugar
2 tsp vanilla extract
2 eggs
350g plain flour
70g cocoa powder
1/4 tsp baking soda
1/2 tsp salt
150g mini chocolate chips (dark chocolate)
500g white chocolate chips
2 tbsp vegetable shortening
more dark chocolate chips for eyes

Method:

Cream together the butter and sugar until pale and fluffy then add the eggs, one at a time, beating thoroughly to combine after each addition then beat in the vanilla extract. In the meantime, sift together the flour, cocoa powder, baking soda and salt into another bowl.

Gradually add the flour mix to the egg and butter mix, mixing thoroughly to combine then stir in the 150g mini chocolate chips. Bring together as a dough then refrigerate this for 20 minutes to firm.

Take 1 tbsp of the dough and roll into a long carrot shape to form the mummy body. Take 1 tsp of the dough and form into a grape shape. Attach this to the wide end of the body. Transfer to a greased baking tray and repeat the process on the remaining dough. Alternatively, shape the biscuit mix into ovals and arrange these on the baking tray.

Once the dough is used up, transfer the cookies to an oven pre-heated to 170°C and bake for about 8 minutes, or until the dough is set. Allow to cool slightly on the baking tray then transfer to a wire rack to cool completely.

Once the cookies are cold, combine 235g of the white chocolate chips with the vegetable shortening and microwave in 30 second bursts until melted. Taking one cookie at a time, set on a palette knife or cake slice then spoon the melted chocolate mix over the top of the cookie. Set aside on greaseproof (waxed) paper to cool, and as the white chocolate mix is almost set use a wooden toothpick or cocktail stick to score lines on at the body and face to resemble the wrappings of a mummy. Alternatively drizzle over the chocolate mix to make bandage 'ropes'. Insert two chocolate chips in the face for eyes then set aside to cool completely.

Store in a cool, dry, place until needed.
