This recipe is another that shows the German influence on Namibian cookery. It also shows the Sough African influence in the use of bowerwors (literally ‘farmer’) sausages. Quick and easy to prepare, this comforting dish pairs perfectly with pasta, rice, or traditional mielie pap.
Ingredients:
500g fresh sausages (preferably boerwors) cut into rounds
200ml double cream (fresh cream)
250g fresh mushrooms, sliced
150ml vegetable stock or beef stock
1 medium onion, peeled and minced
2 garlic cloves, peeled and minced
1 tsp smoked paprika
¼ tsp cayenne pepper or chilli flakes
1 tsp dried thyme
1 tbsp tomato purée
1 tbsp cornflour or plain flour (for thickening)
pinch of freshly-grated nutmeg
¼ tsp freshly-ground black pepper
2 tbsp vegetable oil for searing
salt, to taste
Method:
Set a large saucepan or deep frying pan over medium heat. Add the 2 tbsp vegetable oil and use to fry the sausage pieces until nicely browned all over (cook in batches if needed so as not to over-crowd the pan). Remove the sausage pieces with tongs and set aside.
Set the pan back over the heat and use to fry the minced onion for 3 minutes, stirring frequently. Add the sliced mushrooms and cook, stirring, for 5 minutes. Now add in the garlic, thyme, smoked paprika, black pepper, cayenne pepper, nutmeg and tomato puree. Continue cooking, stirring, for 1 minute.
Sprinkle over the cornflour and stir to combine then beat in the cream and your choice of stock. Return the sausages to the pan and bring everything to a boil. Reduce to a simmer and continue cooking, uncovered, for 15 minutes, or until the sauce has thickened to your desired consistency.
Taste the sauce and adjust the seasoning if needed.
Serve hot with rice, mielie pap, pearl millet pap, pasta, or simply a piece of bread to soak up the delicious sauce.
