Vospov Pilaf (Lentil Pilaf) is a traditional Armenian recipe for a classic dish of rice cooked with lentils flavoured with onions that's typically served as an accompaniment. The full recipe is presented here and I hope you enjoy this classic Armenian version of: Lentil Pilaf (Vospov Pilaf).

Ingredients:
150g whole green lentils, washed
75g rice, washed
850ml water
salt, to taste
200g onions, chopped
60ml olive oil or melted butter
freshly-ground black pepper, to taste
Method:
Combine the lentils in a pan with the water and salt. Bring to a boil, reduce to a simmer then cook, uncovered, over medium heat for about 15 minutes. Stir-in the rice then reduce the heat to a low simmer and cook until the rice is tender and the water has all evaporated (about 25 minutes).
If the dish is to be served warm then fry the onions in butter until golden brown. Stir into the rice mix, season with black pepper and serve. If the dish is to be eaten cold then fry the onions in olive oil until golden brown.
Set the onions aside to cool then stir into the rice mix and season with black pepper just before serving.
