Vospov Khema (Lentil Dish) is a traditional Armenian recipe for a classic stew of lentils with bulgur wheat flavoured with onions and cayenne pepper. The full recipe is presented here and I hope you enjoy this classic Armenian version of: Lentil Dish (Vospov Khema).

Ingredients:
210g brown lentils or yellow split peas, washed and drained
1l water
175g fine bulgur wheat (break normal bulgur wheat in a blender if needed)
1 tbsp salt
generous pinch of freshly-ground black pepper
pinch of cayenne pepper
120ml vegetable oil + 2 tbsp melted butter
200g onions, chopped
75g flat-leaf parsley, chopped (to garnish)
150g finely chopped red onion (to garnish)
Method:
Add the lentils (or peas) to a pan along with the water. Bring to a boil then cook over low heat for about 75 minutes (do not stir). Take the pan off the heat then stir-in the bulgur wheat and seasonings. Cover and set aside for 20 minutes, or until the bulgur wheat is soft.
About ten minutes before you are ready to serve, heat the oil and butter mix in a pan, add the onion and cook until soft and golden brown.
Turn the lentil mix into a bowl, pour the onion mixture over the top and serve garnish with a mix of chopped onion and chopped parsley.
