Ingredients:

1 large onion, chopped
3 garlic cloves, minced
1 tsp ground cumin
1/2 tsp ground coriander seeds
1 tsp hot Hungarian paprika (or more), to taste
1.5l chicken stock
210g lentils, rinsed and dried
600g frozen spinach, thawed
880g tinned, chopped, tomatoes (with juice)
salt and freshly-ground black pepper, to taste
4 tbsp lemon juice (or to taste)

Method:

Heat a casserole dish over high heat and when very hot add the onion, garlic, cumin, coriander and paprika (if possible add these all at one). Fry, without stirring, for 30 seconds then add 120ml of the chicken stock. Continue cooking over high heat, stirring constantly, for 4 minutes then add a further 120ml of the chicken stock. Scrape the base of the pot to remove any dried particles then add the lentils and spinach. Cook, stirring constantly, for 2 minutes then add the remaining stock along with the tomatoes and tomato juice.

Bring the mixture to a boil then reduce the heat to low, season to taste with salt and freshly-ground black pepper then simmer, covered, for about 50 minutes, or until the lentils are tender. Season to taste with the lemon juice then adjust the levels of salt and black pepper, to taste. Take off the heat and allow to stand for 5 minutes before serving.
