Vegetarian Quiche

Ingredients:

1 prepared pie dough
15g herbed goat cheese
140g Fried onion rings
80g roast yellow bell pepper strips
80g roast red bell pepper strips
80g Cheddar cheese, grated
360g milk
3 eggs
1/2 tsp Worcestershire sauce
salt & pepper, to taste

Method:

Crumble the herbed goat cheese and spread on the bottom of an unbaked pie crust in a metal quiche dish. Top with the fried onions, the red and yellow peppers and half of the Cheddar cheese.

In a mixing bowl, whisk together the evaporated milk, eggs and Worcestershire sauce. Season with salt and pepper.

Pour the mixture into the pie crust and top with the remaining cheese.Bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for 35 to 45 minutes or until a knife inserted in the filling comes out clean.

Allow the quiche rest for 10 minutes before cutting.
