Turks and Caicos Mango Salsa

Turks and Caicos Mango Salsa is a traditional Turks and Caicos Islander recipe for a classic hot sauce made from a blend of Scotch bonnet chillies, vinegar, onion, garlic and spices sweetened with sugar. This mango salsa is a common accompaniment on the islands of Turks and Caicos and is often considered amongst the national dishes of Turks and Caicos.

Ingredients:

1 ripe mango, peeled and cubed
1 small onion, peeled and diced
1/2 red bell pepper, cored and diced
1/2 green bell pepper, cored and diced
Juice of 1 lime
1–2 tbsp fresh coriander (optional)
1 red cayenne chilli, sliced into rings
Salt and freshly-ground black pepper to taste

Method:

Peel the mango and cut it into small cubes.

Combine all the ingredients (except the lime juice and coriander) in a bowl, toss them to combine then pour over the lemon juice.

Scatter over the coriander leaves then season to taste with salt and freshly-ground black pepper. Toss everything to mix thoroughly then transfer to your refrigerator and chill for at least 30 minutes before serving.
