Pişme (Turkmen Fried Bread Snack) is a traditional Turkmen (from Turkmenistan) recipe for a classic snack of sweetened bread pieces that are deep fried before serving. The full recipe is presented here and I hope you enjoy this classic Turkmen version of: Turkmen Fried Bread Snack (Pişme).

Pişme (pronounced Pishme) is a traditional Turkmen snack that is served with green tea during celebrations, especially weddings and baby showers. It was also served to guests upon their arrival to show hospitality. Although nowadays pishme is thought of as a sweet snack, it was originally prepared without sugar. I have added in sugar to my recipe but feel free to leave it out if you want a “truer” taste. And if you want a softer pishme, you can use milk instead of water.
Ingredients:
1 tsp salt
2 tbsp sugar
1 tsp active dry yeast
300ml warm water or warm milk
500g flour
Vegetable oil, for deep-frying
Method:
Whisk together the salt, sugar, yeast and water in a large bowl.
Sift over the flour then work into the other ingredients to form a soft dough. Wrap the bowl in a thick kitchen towel then set aside in a warm place until the dough is nicely risen (about 40 minutes).
Divide the dough into two equal pieces then roll each piece between your palms into a ball. Cover the dough balls with a kitchen towel and allow to rest for 5 minutes.
Take the first ball of dough and roll out on a floured work surface to 5mm thickness.
Cut the dough into long, 4-5 cm wide strips. Then cut the strips crosswise, forming diamond shapes.
Repeat with the remaining dough half.
Place a wok or deep pan over medium heat. Pour in oil so that it's 4cm deep. When the oil is hot, drop in the pişme and fry, stirring continuously with a slotted spoon.
Remove the pishme with a slotted spoon or spider when they are golden brown on both sides.
