Tomato Sauce with Emperor's Mint for Pizza

This is a classic pizza topping tomato sauce that can be made quickly from tinned tomatoes and which contains Emperor's mint as a flavouring. This sauce goes particularly well with meat-based toppings.

Ingredients:

1 small onion, finely chopped
1 garlic clove, crushed
1 tbsp olive oil
200g tin of chopped tomatoes
2 tsp tomato purée
1/2 tsp brown sugar
1/2 tsp dried oregano
2 tsp Emperor's mint, finely shredded
1 bayleaf
salt and freshly-ground black pepper, to taste

Method:

Heat the onion in a pan and use to gently fry the onion and garlic for abut 5 minutes, until soft but not browned. Now add the tomatoes, tomato purée, sugar, oregano, Emperor's mint and bay leaf. Season well then bring to a boil, reduce to a simmer then cover and cook gently for 20 minutes, stirring occasionally until you have quite a thick sauce.

Remove the bay leaf and adjust the seasonings then set aside to cool well before using. You can store the sauce in a screw-top jar in the refrigerator for up to a week.
