Togolaise Juis de Gingembre (Togolese Ginger Juice)

Ginger juice or ginger beer is a drink made in most West African countries. The Togolese version is distinguished in that it's blended with pineapple juice before serving.
Ingredients:
For the Ginger Juice:
100g fresh ginger
1l water
sugar, to taste
To Serve
800ml pineapple juice
8 mint leaves
Method:
Peel the ginger and grate finely (reserve any juice). Place the ginger and juice in a heat-proof bowl pour over 1l boiling water. Cover and set aside to steep for 60 minutes.
After this time, pour the juice through a fine-meshed sieve lined with a double layer of muslin (or through a coffee filter). Sweeten the juice to taste then allow to cool and chill in the refrigerator over night.
To serve, blend 120ml of the ginger juice with 120ml of pineapple juice. Stir 2 crushed mint leaves into every glass and serve immediately.
