This is a classic Norwegian cloudberry-based dessert. The name literally means 'Veiled Peasant Girls'. This is quite close to a Scandinavian version of Scottish Crannachan and is basically a kind of trifle. Apple sauce can also be used in this dessert instead of the cloudberries.
Ingredients:
150ml fresh cloudberries, hulled, washed and drained
35g caster sugar
4 oatcakes
150ml whipping cream
1/2 tsp vanilla sugar
shreds of orange zest and curls of chocolate, to garnish
Method:
Place the cloudberries in a bowl and crush with a fork. Add the sugar and keep stirring until all the sugar has dissolved.
Crush the oatcakes then whip the cream with the vanilla sugar until soft peaks form.
Fill the base of two dessert glasses with the crushed oatcakes. Sit the cloudberries on top then spoon over the whipped cream. Garnish with the orange zest and chocolate then serve.
