Ayran (Turkish Cypriot Chicken and Taro Stew) is a traditional Northern Cypriot recipe for a classic drink of sheep milk yoghurt blended with water and salt that's served in glasses and garnished with mint. Ayran is the most common drink offered at any time and particularly with meals in Turkey and North Cyprus. It is very refreshing and satisfying but also quite filling, so it is best not to serve it in large quantities.

Ingredients:

250g thick sheep's milk yoghurt
150ml cold water
A little salt
Mint, dried or fresh (crumbled if dried, shredded if fresh)

Method:

Combine all the ingredients (except the mint) in a blender and process for 1-2 minutes until smooth and lightly frothy.

Alternatively, beat in a bowl with an egg whisker, until well amalgamated.

Divide evenly between four glasses, garnish with some mint and put some mint and serve.
