Taro pudding traces its roots to various Asian and Pacific Island cultures where taro is a staple ingredient. It has been enjoyed for generations as a comforting dessert, often served during festive occasions and celebrations.
Ingredients:
220g mashed taro (peel boil until tender then drain and mash)
400ml tin coconut milk
4 tbsp sugar or honey (adjust to taste)
Pinch of salt
Method:
In a saucepan, combine mashed taro, coconut milk, sugar (or honey), and a pinch of salt.
Place over medium heat and cook, stirring constantly, until the mixture thickens (typically 10–15 minutes).
Once thickened to a pudding-like consistency, remove from heat. Set aside to cool slightly before serving.
Optionally, you can garnish with toasted coconut flakes or chopped nuts before serving.
