Tahin (Coconut Candy) is a traditional Tahitian recipe for a classic candy made from a blend of grated coconut, sugar, coconut milk, vanilla extract and salt boiled until thick and shaped into balls or squares. Ingredients:
150g fresh coconut, grated
200g granulated sugar (I prefer golden)
250ml coconut milk
1 tsp vanilla extract
Pinch of salt
Method:
Combine the grated coconut, sugar, coconut milk, vanilla extract and salt in a medium-sized saucepan.
Place over medium heat and cook the mixture, stirring constantly, until it thickens and pulls away from the sides of the pan (about 15 minutes).
Take off the heat then set aside to cool until it can just be handled. At this point, use moistened hands to take small pieces of the mixture, shaping them into balls, diamonds or squares.
Set on a baking tray lined with greaseproof (waxed) or parchment paper and allow to cool completely.
