If you want this to be more autumnal in nature then use baby spinach instead of the lettuce.
Ingredients:
200g diced, boiled, pumpkin
4 tbsp brown sugar
250ml cider vinegar
1 head Romaine lettuce
1 head Iceberg lettuce
2 tomatoes, cut into wedges
1 red onion, diced
75g slivered almonds, toasted
75g pumpkin seeds, toasted
50g Feta cheese, crumbled, to garnish
For the Dressing:
1 tbsp freshly-grated orange zest
1 tsp ground cinnamon
1/2 tsp ground allspice
2 tbsp vegetable oil
salt and black pepper, to taste
1 medium-sized pumpkin, hollowed out, to serve
Method:
The night before prepare your pumpkin then combine the brown sugar and cider vinegar and use this to marinate the pumpkin dice over night. The following day, drain the pumpkin (but reserve the liquid).
Prepare the vegetables, add to a bowl and toss to combine with the pumpkin. Now mix 120ml of the reserved cider vinegar mixture with all the remaining dressing ingredients. Whisk to combine then toss to combine with the salad. Transfer to your hollowed-out pumpkin or a salad bowl then garnish with the crumbled feta cheese.
Serve with the mixed almonds and pumpkin seeds on the side. Each guest should sprinkle this on their salad.
