This is another classic Zambian staple. Easy to make, yet very filling. White sweet potatoes would be typical, though it can also be prepared with squashes and pumpkins.
Ingredients:
4 large sweet potatoes, peeled and halved crossways
500ml peanut butter
400ml boiling water
salt, to taste
Method:
Bring a pan of lightly-salted water to a boil. Add the sweet potatoes and boil for about 25 minutes, or until just tender.
Drain the potatoes, allow to cool until they can be handled then dice the potato flesh.
Place in a pan then mix together the peanut butter and boiling water until smooth. Pour over the potatoes and bring to a simmer.
Season to taste with salt, cook until the sauce has thickened (about 15 minutes) then serve. Serve to accompany your favourite stew and greens dish. Accompany with hot sauce (Zambian Piri Piri, of course!).
