Sweet Potato Stuffing is a traditional Jamaican recipe for a classic stuffing made from a blend of mashed sweet potato, onion, green beans, raisins and pineapple flavoured with garlic, oregano and chilli that's used to stuff fish or fowl, but which can also be baked and served as an accompaniment. Peel and cook the sweet potato then mash until smooth. Add a little oil to a pan and use to fry the onion and green beans for about 6 minutes, or until the onion is soft. Combine with the mashes potato then stir in all the remaining ingredients.
Use as a stuffing for fowl or fish. If there is any left-over stuffing this can be used as a baked accompaniment to your meal (cook in the oven for about 40 minutes).
