Sweet Potato Filled Oranges is a traditional American recipe for a classic dessert of hollowed oranges filled with a mix of sweet potatoes, orange juice, eggs, butter, brown sugar and nuts that's oven baked before serving and which makes an excellent treat for Halloween or Christmas. The full recipe is presented here and I hope you enjoy this classic American version of: Sweet Potato Filled Oranges.
Cut the tops off the oranges (a slice about 12mm thick). Now carefully remove the flesh from the oranges, so that the skins remain intact and can easily be filled.
In a mixing bowl, combine the mashed sweet potato with the orange juice then mix in the eggs and vanilla extract before adding half the butter and the orange zest. Mix thoroughly to combine then use this mixture to fill the hollowed-out orange skins. Arrange the filled oranges in a deep casserole dish so that they hold each other up.
Now mix together the remaining butter with the brown sugar, four and pecan nuts in a small saucepan. Cook this mixture gently until the sugar dissolves then spoon the resultant syrup over the filled oranges. Add water to a depth of about 15mm in the casserole dish then transfer to an oven pre-heated to 170°C and bake for about 30 minutes, or until done through.
