Though sweet pizzas or dessert pizzas are fairly common on the menus of many pizzerias today it should be remembered that they are, effectively, an American invention of the early 1980s. The recipe below is for a classic sweet pizza dough which, in effect, is a flattened rich pie dough.

Ingredients:

140g plain flour
1 1/2 tbsp baking powder
2 tbsp sugar
60g (4 tbsp) butter
1/2 egg yolk
2 tbsp orange juice (approximately)

Method:

Sift together the flour and baking soda into a bowl. Cube the butter and add to the flour mixture then rub in with your fingertips until the mixture resembles fine breadcrumbs. Add the egg yolk and combine thoroughly then stir-in just enough orange juice to form a stiff but manageable dough (this should be the consistency of ordinary pastry).

Knead the dough for a few minutes then wrap in clingfilm and chill in the refrigerator for about 15 minutes or until firm enough to roll.

Turn the pizza dough onto a floured surface and roll out to about 25cm in diameter then pinch the edges to raise them with your finger and thumb. Transfer to a lightly greased baking sheet and top as desired. Bake in an oven pre-heated to 180°C and bake for 20 minutes, or until golden and set.
