Ingredients:
500g potatoes, peeled and cubed
salt, to taste.
1/2 tsp sugar
1 tbsp masala curry powder
2 tbsp sunflower oil
2 garlic cloves, chopped
2 small onions, diced
Method:
Place a wok or large pan over medium heat. Once hot, add in the oil and use to fry the onion and garlic for about 6 minutes, until the onion is soft and translucent. Scatter over the masala and stir to combine.
Now immediately add the potatoes. Just cover with boiling water then stir in the sugar and season to taste with salt.
Continue cooking, uncovered, over medium heat for about 25 minutes until the potatoes are tender and the liquid has reduced to a thick sauce.
As an option, 10 minutes before the potatoes are done, you can add a 400g tin (drained) of chickpeas.
