Stuffed Morels

Any large-capped morel mushroom would be suitable for this recipe.

Ingredients:

12 medium-sized morels halved lengthways and washed
240g fresh, cooked, crab meat
1 egg, beaten
60ml olive oil
2 tbsp mayonnaise
2 tbsp chopped red onions
2 tsp freshly-squeezed lemon juice
70g breadcrumbs, seasoned
2 tbsp melted butter

Method:

Combine the crabmeat, egg, salad oil, mayonnaise, onions, lemon juice and half the breadcrumbs together in a bowl. Use this mixture to fill the insides of the morels. Place in an oven-proof dish then mix the butter and remaining breadcrumbs together and sprinkle on top.

Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 15 minutes. Serve immediately.
