Here is a classic Scottish dessert of pears served with cream flavoured with ginger wine.

Ingredients:

400g tin of pears (or dessert pears stewed until soft)
300ml double cream
5 tbsp ginger wine
juice of 1/2 lemon
finely-grated zest of 1/2 lemon
60g caster sugar

Method:

Chop the pears and lightly mash in a bowl then spoon into the base of four dessert glasses.

Mix together the sugar, lemon juice, lemon zest and ginger wine. Stir until the sugar has dissolved then beat the mixture into the double cream. Whip lightly then pile the cream on top of the mashed pears.

Chill in the refrigerator for at least 2 hours and serve.
