This is an American recipe for a spicy dry rub that is suitable for almost any dish. It works well with meats, poultry and even vegetables.

Ingredients:

50g brown sugar
4 tbsp paprika
4 tsp black pepper
4 tsp sea salt
4 tsp garlic powder
4 tsp onion powder
2 tsp cayenne pepper
2 tbsp dried oregano, crumbled
1 tbsp ground cumin
2 tsp ground angelica seeds
1/2 tsp ground dried angelica root
2 tbsp chilli flakes

Method:

To prepare, simply whisk together all the ingredients in a bowl until thoroughly blended.

Spoon into a jar, secure an air-tight lid and sore in a cool, dark, cupboard.

This can be used directly as a rub for meat or vegetables (use more sparingly on vegetables) or as a flavouring to add to stews and casseroles.
