Spiced Honey Loaf

This cake comes from the Western Cape and was introduced by Afrikaans settlers. It's derived from the Dutch ontbijtkoek (breakfast cake) which remains popular in the Netherlands even today.

Ingredients:

250g honey
100g white sugar
3 tbsp brandy
350g plain flour
1 tsp baking powder
20g mixed peel
finely-grated zest of 1 lemon
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground allspice

Method:

Combine the honey, sugar and brandy in a small pan. Bring the mixture to a boil and when it begins to foam stir in the lemon zest, mixed peel, cinnamon, cloves and allspice.

Immediately pour the mixture into a large mixing bowl and set aside to cool.

Once cold sift over the flour and baking powder then mix into the other ingredients to yield a firm, stiff, dough (if the dough seems a little too wet, add more flour).

Turn into a small loaf tin that's been greased and floured then transfer to an oven pre-heated to 160°C and bake for 60 minutes or until well risen and dark golden brown on top.

Allow to cool in the tin for 5 minutes then turn out onto a wire rack to cool completely. Serve liberally spread with butter and accompanied by freshly-brewed coffee.
