This is a classic Southern recipe for a rich stuffing (dressing) made with oysters that can either be baked in the turkey or separately and which is typically cubed and served with gravy poured over it.

Ingredients:

600ml oysters, shucked and drained (reserve the liquor)
150ml butter, melted
2 tsp sea salt
1 tsp poultry seasoning
1/4 tsp freshly-ground black pepper
2l bread crumbs
180ml mix of milk and the reserved oyster liquor
100g celery, chopped
100g onions, chopped

Method:

Bring a pan of water to a boil, add the oysters and boil for about 3 minutes, or until the edges of the flesh just begin to curl. Drain and chop then set aside.

Melt the butter over gentle heat in a pan then add the salt, poultry seasoning and black pepper. Stir into the butter then take off the heat. Add the breadcrumbs to a large bowl then scatter the oyster pieces over the top before pouring over the butter mix. Toss the ingredients to combine then use the milk and oyster liquor mix to moisten the mixture before stirring in the celery and onions (stir carefully so you do not mash the breadcrumbs).

Either use this mixture to stuff your turkey prior to roasting, or place the stuffing mix in a baking dish and bake for 60 minutes at 160°C.

See the guide to roasting for how to best roast your turkey.
