This is a classic muffin variant from Louisiana in the American south. The finished muffins have a thick crust and a cake-like centre. They can be served for breakfast, but are more commonly served as accompaniments to main courses.
Mix together the flour, sugar, baking powder and salt in a bowl, using a fork to ensure that there are no large lumps. Dice the butter, add to the flour mix and rub in with your fingertips until the mixture resembles coarse meal.
Gradually stir in the milk, mixing it until the dry ingredients are just moistened (for this muffin, more so than other types, it's essential that you do not over-beat the mixture).
Divide the batter between 12 well-buttered muffing cups. Transfer to an oven pre-heated to 180C (350F, Gas Mark 4) and bake for about 35 minutes, or until golden brown and well risen.
