South African Potato Salad

South African Potato Salad is a traditional South African recipe for a classic potato-based salad with anchovies, parsley, herbs, onions and eggs in a mayonnaise dressing that is a mainstay of braais (barbecues). Along with bread, this is a classic accompaniment to a South African braai or barbecue. This potato salad, though simple to make is full of big flavours and works particularly well as an accompaniment to barbecued meat. So, the next time you have a barbecue, why not serve this as an accompaniment? Its the blend of mayonnaise and condensed milk, yielding a hint of sweetness that makes this uniquely South African.

Ingredients:

1kg baby new potatoes
6 spring onions, coarsely chopped
1 generous handful of chives, coarsely chopped
1 large handful of flat-leaf parsley, coarsely chopped
8 anchovies, finely chopped
1 tbsp capers, finely chopped
2 hard-boiled eggs, coarsely chopped
4 tbsp mayonnaise
2 tbsp condensed milk
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of salted water to a boil. Scrub the potatoes, add to the pan and boil for about 20 minutes, or until the potatoes are just tender. Drain in a colander and set aside to cool.

When the potatoes have cooled, halve them crossways and season with plenty of freshly-ground black pepper. Blend the mayonnaise with the condensed milk then add to the potatoes and turn to coat.

Add the remaining ingredients and mix gently to combine with the potatoes (but take care not to break the potatoes up).

Season lightly with salt, turn into a bowl and serve.
