These classic lemon candies have a sweet and sour balance that make them a truly interesting sweet (candy) to make at home.
Ingredients:
450g caster sugar
60ml fresh lemon juice (about)
freshly-grated zest of 1 lemon
2 tsp lemon essence (or to taste)
Method:
Combine the sugar and lemon zest in a saucepan. Stir in just enough of the lemon juice to forma stiff paste. Set over a medium heat and allow to come almost to a boil, stirring constantly. Take off the heat as soon as the bubbles start to appear in the mixture.
Set aside to cool a little, stirring constantly, then add the lemon essence (you will need a little more than you think). Now drop the mixture onto sheets of greaseproof (waxed) paper and set aside in a warm place (like a cook oven) for about 2 hours to dry completely. Peel off the paper and place in an air-tight tin to cool completely.
