Sonso is a cheesy yuca bake that's creamy and comforting.
Ingredients:
1 tbsp salt to taste
2 eggs
1kg of cheese, grated
1 tbsp of oil or butter
120ml of milk
1kg of cassava, peeled and chopped
Method:
Add the cassava to a pan, cover with plenty of water and add a generous pinch of salt. Bring to a boil and continue boiling for about 20 minutes, or until the cassava is tender.
Once the cassava is cooked, mash it with a fork until it becomes a smooth puree and remove the central fibres. Mix the cassava with the grated cheese and add the oil or butter.
Add the milk and eggs, mixing well. Place the resultant dough in a previously greased ovenproof dish.
Bake the mixture in an oven pre-heated to 120°C for approximately 30 minutes, or until the top of the cassava mixture is nicely golden brown.
Remove from the oven and serve hot as an accompaniment.
