Crockpot Pulled Pork

This is a recipe for a spice-rubbed slow-cooked bone-in shoulder of pork that is an excellent make-ahead way of serving pork for good luck on New Year's day. Note that for this recipe, the pork needs to be without skin and any excess surface fat needs to be removed... this is to ensure the spices can penetrate into the pork. I also like to make about a dozen cuts into the meat with a sharp-bladed knife so the spice rub can get inside the meat.

Ingredients:

1.5kg (about) pork shoulder
2 tbsp smoked paprika
2 tbsp brown sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
1 tsp freshly-ground black pepper
1 tsp cayenne pepper
60ml cider vinegar
180ml water

Method:

In a small bowl mix together the ingredients for the spice rub: brown sugar, garlic powder, onion powder, salt, pepper, and cayenne pepper.

Rub the dry spice mixture onto all sides of the pork and set aside to marinate for 20 minutes.

Pour the vinegar and water into your slow cooker. Gradually lower the marinated pork into this, taking care not to wash off the spice mixture.

Cover and cook on high for 4-5 hours or on low for 8 hours.

Remove pork from the liquid and shred with 2 forks. Discard any fatty pieces.

Add the shredded pork back into the liquid and keep warm until ready to serve.

You can make this several days in advance, storing the shredded meat and cooking liquid in the refrigerator. When about to serve, mix together in a slow cooker and cook on high for 30 minutes to re-heat.
