Sierra Leone is well known for its fried rice dishes, where the previous evening's cooked rice is used to make a delicious meal by adding other ingredients. Here the rice is blended with pork and vegetables to yield a delicious and brightly coloured dish that's also simple to prepare.
Ingredients:
1kg (2 lbs) pork shoulder, meat cut into cubes
1l (4 cups) leftover cooked rice
2 large carrots, scraped and chopped
1 large brown onion, chopped
1/2 small cabbage, cored and chopped
140g (1 cup) frozen peas
165g (1 cup) frozen sweet corn
120ml (1/2 cup) vegetable oil
4 garlic cloves, minced
2 tsp stock/bouillon powder
1 habanero chilli, finely chopped
2 tbs sweet soy sauce
Method:
Place the pork in a bowl and season with the minced garlic and scock/bouillon powder. Steam for about 10 minutes to reduce the fat.
Heat the oil in a large pan of wok, add the steamed pork and fry for about 5 minutes to brown the meat. Add the onion and chilli, frying for 5 minutes.
Stir in the carrots and fry for 5 minute more before adding the cooked rice and soy sauce. Stir well to combine and continue frying for 6-8 minutes.
Lower the heat, add 1l (4 cups) hot water, bring to a simmer, cover and cook for 10 minutes.
Stir in the peas and sweet corn then cover and cook for a further 8 minutes.
Finally, stir in the cabbage and cook for 3 minutes. Turn into a warmed bowl and serve.
