This is an unusual spice blend, that works as a seasoning for marinades, sauces or infusions.

Method:

Toast the sea plantain and stinging nettle seeds in a dry frying pan until fragrant. Separately toast the alexanders seeds, turn into a spice grinder and render to a coarse powder.

Mix all the ingredients together in a bow. Spoon into an air-tight jar and store in a cool, dark, cupboard.

Use the spice to season other dishes.
