Sea Aster and Parmesan Croquettes

Ingredients:

50g onions, chopped
1 tbsp oil
200g sea aster leaves, roughly chopped and blanched
300g rice, cooked
140g Parmesan cheese
1 tsp paprika
1/2 tsp salt
1/2 tsp nutmeg, ground
1/4 tsp black pepper or a pinch of cayenne pepper
2 tsp lemon juice
1 egg

For the coating:
400g fresh breadcrumbs
2 eggs
Oil, for frying

Method:

Fry the onions in oil until light golden and translucent. Stir in the sea aster leaves, rice, Parmesan cheese, paprika, salt, nutmeg, black pepper, cayenne pepper and lemon juice. Take of the heat, set aside to cool then mix in the egg.

Turn into a bowl then set aside in the refrigerator to chill for at least 1 hour.

Beat the eggs for the coating then remove the croquette mixture from the refrigerator and shape into cylindrical croquettes. Roll these in the egg and then the breadcrumbs. Fry in oil, turning so all sides brown to a golden colour.

Serve with a Roasted Tomato Sauce or a Spaghetti Sauce.
