Ingredients:

4 pork cutlets (about 160g each)
salt and freshly-ground black pepper, to taste
flour for dredging
1 egg
1 tsp water
120g fresh breadcrumbs
4 tbsp butter
1 tbsp capers
lemon wedges, to garnish

Method:

Place the pork cutlets between two sheets of clingfilm (plastic wrap) and pound until thin. Season lightly on both sides with salt and freshly-ground black pepper then dredge lightly in flour.

Beat the egg and the water together lightly then dip the in the mixture before coating evenly in the breadcrumbs. Tap lightly with the back of a kitchen knife to remove any excess crumbs then place on a wire rack and refrigerate for at least 90 minutes (this helps the crumb coating adhere). Heat the butter in a large frying pan and when hot add the breaded cutlets. Fry until they are golden brown on both sides (about 8 minutes) then transfer to a heated plate, garnish with the capers and lemon wedges then serve.
