Savoury Aigrettes

Here is another classic recipe for making the most of leftover Christmas turkey.

Ingredients:

40g butter
150ml water
2 tbsp onion, very finely chopped
65g plain flour
2 large eggs
salt and freshly-ground black pepper, to taste
cayenne pepper, to taste
75g cooked ham, finely chopped
175g cooked turkey meat, finely chopped
50g mature Cheddar cheese, grated
oil for deep frying

Method:

Combine the butter and water in a saucepan. Heat gently until the butter dissolves then add the onion and bring the mixture to a boil. Take off the heat and beat in the flour until smooth.

Continue beating until the mixture thickens and comes away from the sides of the pan. Add the eggs, one at a time, beating thoroughly to combine after each addition. Season to taste with salt, black pepper and cayenne pepper then mix in the ham, turkey and the cheese.

Heat oil in a deep fryer to 180°C and drop teaspoonfuls of the turkey mixture into the hot oil. Deep fry until golden brown and crisp then drain on paper towels.

Serve hot, accompanied by a piquant tomato, sweet chilli or red wine dipping sauce.
