Sauce au Cumin (Sauce with Cumin) is a traditional French recipe for a classic sauce of chicken or game stock with lemon juice, garlic, sugar, cumin, olive oil and seasonings that's boiled together and typically served with chicken or turkey. Ingredients:
250ml chicken or game stock
1 tbsp lemon juice
1 garlic clove, finely chopped
pinch of sugar
1/2 tsp ground cumin
1 tbsp olive oil
salt and black pepper, to taste
Method:
dd all the ingredients to a saucepan, bring to a boil then reduce to a simmer and cook for about 3 minutes or until the sauce thickens.
Cumin goes wonderfully well with chicken and turkey and it's these meats that this sauce is best suited for.
