Bring the milk just to the boiling point. Stir in the grated coconut then take off the heat. Cover and set aside to stand for 15 minutes.
When the mixture has infused, melt the butter in a saucepan, scatter over the cornflour (cornstarch) and stir to combine then add the salt and ginger.
Take off the heat then gradually work in the milk mixture, stirring constantly. Put back on the heat and bring to a boil over low heat, stirring constantly. Continue boiling, stirring constantly, for 1 minute.
Take off the heat and stir in the lemon juice. Serve immediately, poured over your choice of vegetables.
