Home-made Saltine Crackers

Ingredients:

550g plain flour
1 tsp baking powder
140g shortening
320ml milk
sea salt, to taste

Method:

Combine the flour, baking powder and shortening in a bowl and mix thoroughly to combine. Add the milk and blend thoroughly then, using your hands, bring the dough together as a ball. Turn onto a lightly-floured work surface and divide into four pieces.

Take one of these pieces, put on a lightly-floured work surface and, using a floured rolling pin roll out until very thin. Take a pastry cutter an cut circles (with crinkly edges, if you wish) from the dough. Transfer to a greased or lined baking tray then prick the top of each four or five times with the tines of a fork. Sprinkle the tops with salt then re-roll the scraps and repeat with the remaining dough.

Transfer to an oven pre-heated to 180°C and bake for about 10 minutes, or until golden (keep careful watch on the crackers to ensure they do not burn). Transfer to a wire rack to cool completely then store in an air-tight tin.
