This is a classic Tex-Mex recipe for chicken seasoned with taco seasoning blend cooked in salsa and topped with grated cheddar cheese.

Ingredients:

4 skinless, boneless chicken breast halves
4 tsp taco seasoning mix
250g salsa
125g grated Cheddar cheese
2 tbsp sour cream (Optional)

Method:

Pre-heat your oven to 180°C (160°C fan/355°F/gas mark 4). Lightly grease a 22x33cm baking dish.
Ingredients to make salsa chicken

Sit the chicken breasts in the baking dish, sprinkling the taco seasoning on both sides of the chicken beforehand.

Pour over the salsa then transfer to your pre-heated oven and bake for about 30–35 minutes, until the chicken is cooked through and the juices run clear.

Remove from the oven then top with the grated cheese. Return to the oven and continue cooking for about 5 minutes more, until the cheese has melted.

Top with the sour cream and serve.
