Ingredients:

1 whole lobster (about 1kg)
oil, to taste
vinegar, to taste
4 eggs
500g potatoes

Method:

Bring a lightly-salted pan of water to a boil. Add the lobster and cook for about 20 minutes, or until tender.

In the meantime, in separate pans scrub the potatoes and boil in salted water for about 30 minutes, or until tender. Boil the eggs for about 6 minutes, or until hard boiled then drain and peel.

Drain the cooked potatoes, peel them and slice into rounds. Also slice the eggs into rounds.

Crack the shell of the lobster and remove all the meats then cut the meat into serving-sized pieces.

Arrange the potatoes and eggs in layers in a dish. Arrange the lobster meat on top.

Prepare a vinaigrette with vinegar and oil (in a 1:2 ratio). Season with salt and black pepper.

Pour over the salad and serve.
