This is an Egyptian method for serving raw spinach as an accompaniment.

Ingredients:

400g spinach leaves
fine sea salt

Method:

Trim the stems of the spinach leaves then rinse under cold water and drain. Chop the spinach coarsely, place in a bowl then season with salt.

Rub the salt into the spinach (this will make it less bitter) then rinse and drain.

Place in a bowl and serve.
