Rooibos Candies is a modern South Africa recipe for a sugar candy made with rooibos (redbush) tea. The full recipe is presented here and I hope you enjoy this classic South Africa version of: Herb Candies.

Ingredients:
700ml strong redbush/rooibos tea (bring 6 redbush teabags to a boil in 1l water, take off the heat and set aside to infuse for 15 minutes)
1.5kg granulated sugar
Method:
Combine the redbush tea and sugar in a large saucepan (you really will need a large steep-sided pot for this as the mixture will foam up). Bring to a boil and continue boiling until the mixture reaches 144°C as measured with a confectioner's thermometer (the soft-crack stage).
Take off the heat and pour into a large, shallow, pan that's been well buttered. Set aside to cool, but use a buttered knife to cut into squares just before it completely hardens.
As an alternative you can also pour onto a large marble slab and when it cools enough to be handles pull it like toffee before cutting with scissors (this will give you a softer, chewier, end result).
