Ingredients:
800g red bell peppers, whole
12 garlic cloves, peeled
sprig of thyme
2 sprigs of rosemary
2 tbsp white wine vinegar
4 tbsp olive oil
salt and black pepper
olive oil to drizzle
Method:
Lightly oil a baking pan then lay the bell peppers and garlic in this. Drizzle a little olive oil over the top and season well before laying the herbs on top. Place in an oven pre-heated to 200°C and bake until the skins of the bell peppers begin to blacken and peel (about 20 to 25 minutes). Remove from the oven and cover with a tea towel. Set aside to cool.
As soon as the peppers can be handled remove the skin then de-seed and place the flesh in a food processor, along with the roasted garlic. Add the vinegar and olive oil and blend to a smooth puree. Adjust the seasonings and store in jars.
This will keep in the refrigerator for several days and freezes well.
