Riz Gras au Poulet (Fat Rice with Chicken) is a traditional Burkinabe (from Burkina Faso) recipe for a classic one pot dish of rice, chicken and vegetables that's traditionally served with okra sauce. Riz au Gras (literally 'Fat Rice') is a one-pot rice dish, variants of which are found throughout Francophone West Africa. This is a classic example of the dish from Burkina Faso. The dish is very popular in Burkina Faso and it is typically accompanied by sauce and meat.
Ingredients:
2 tomatoes, chopped
2 large garlic cloves
1 small, white, cabbage, quartered
vegetable oil
300g rice, washed and drained
750ml water
1 chicken, jointed and cut into serving-sized pieces
2 aubergines (eggplants), diced
3 carrots, diced
50g green beans, cut into 2cm lengths
1 Maggi chicken bouillon cube
2 onions
Method:
Heat the oil in a large pot. Add the chicken pieces and fry for about 15 minutes or until nicely browned all over. Add the tomato, rice, garlic, aubergine, green bean pieces and water then bring to a simmer and cook for 20 minutes.
At this point add the cabbage and carrots. Bring back to a simmer and cook for 10 minutes, or until the vegetables and chicken are tender and the sauce has thickened.
