Ingredients:
250g rice, washed well and drained
500g chicken livers, cut into medium-sized pieces
1 onion, chopped
4 tbsp butter
3 vegetable oil
salt and freshly-ground black pepper, to taste
fried nuts and raisins, to garnish
Method:
Heat about 2 tbsp butter in a pan, add the rice and stir to coat. Fry over medium heat for 2 minutes then add water to cover by 2cm and set aside to cook over low heat.
Heat 2 tbsp butter and 3 tbsp vegetable oil in a pan. Add the onion and fry for about 5 minutes, or until golden. Stir in the livers and season to taste with salt and black pepper. Fry for about 2 minutes then take off the heat.
Stir half the liver mixture into the rice and mix thoroughly to combine. Cover the pan and cook gently for about 30 minutes, or until the liquid has been absorbed and the rice is tender.
Turn the rice onto a serving dish and arrange the remaining liver mixture on top. Garnish with fried nuts and raisins and serve.
