Ingredients:
250g diced rhubarb
250ml red wine
400g granulated sugar
100ml Dijon mustard
1.75kg chicken breast fillets
1 tbsp olive oil
Method:
Combine the rhubarb, red wine, sugar and mustard in a pan. Bring to a simmer, cover and cook for about 10 minutes or until the rhubarb is soft. Take off the heat, turn into a blender and purée until smooth.
Place the chicken breasts between two sheets of clingfilm (plastic wrap) and pound to flatten slightly. Brush the chicken with the rhubarb purée then place on the barbecue. Cook for about 7 minutes per side, turning often and brushing with more rhubarb glaze. Ensure that the chicken is completely done before serving.
