Redcurrant Juice

Ingredients:

1l of fresh redcurrants
375ml cold water
4 tbsp white sugar or honey
Ice cubes, for blending and serving
sprigs of mint, to garnish (optional)
sprigs of redcurrants, to garnish

Method:

Combine the redcurrants, a few ice cubes, the water and sugar in a blender. Process until smooth then pour into a medium-sized jug and refrigerate for 1–2 hours until lightly chilled.

Drop a few ice cubes into a glass, pour in the redcurrant juice, add a garnish of a sprig of mint and a sprig of redcurrants then serve.

This juice is exceptionally well suited to preparing a spritzer: mixed 1:1 with sparkling water (this being a form of German Johannisbeerschorle). Enjoyed as a spritzer it makes the perfect companion to tender white meat such as saddle of veal with porcini polenta and stuffed courgette flowers, or delicately prepared offal such as veal kidneys with chanterelles.
